Vegetarian Sweet Potato Nests
- 2 medium russet potatoes
- 2 medium sweet potatoes
- 3 tablespoons (45 mL) olive oil
- ¼ teaspoon (1.25 mL) kosher salt
- 12 large eggs
Sweet Potato Nests with Bacon
- 4 sweet potatoes
- 12 eggs
- 6 slices of bacon, cooked and crumbled
- 2 tablespoons (30 mL) of fresh chives, minced
- Cooking fat
- Salt and pepper
Spinach Sweet Potato Nests
- 1 medium sweet potato
- 20 ounces (600 mL) of frozen spinach, thawed and with liquid removed
- 12 eggs
- 1 teaspoon (5 mL) garlic powder
- 1 teaspoon (5 mL) onion powder
- Salt and pepper, to taste
- 1 tablespoon (15 mL) fat of choice

Making Vegetarian Sweet Potato Nests
- Bake your potatoes. Set your oven to 400 degrees Fahrenheit (about 205 degrees Celsius). Place your sweet and russet potatoes on a baking tray and bake them for about 20 minutes. When your potatoes are done, they should be cooked through but not entirely tender or soft to the touch.
- Peel and grate the potatoes. Wait until your potatoes are cool to the touch. Then, use a vegetable peeler to peel off the skins. Use a grater, such as a cheese grater, to grate the potatoes into a mixing bowl.
- Mix in the olive oil and salt. Add the olive oil and salt to your bowl with the potatoes. Mix everything together into a even, consistent mixture.
- Transfer the mixture to a muffin pan. Divide the mixture evenly between 12 compartments in a muffin pan. The mixture will shrink considerably during the baking process, so expect the compartments to be very full. Then, press down the center of each cup so you have a slight indent. This is where you'll put the eggs.
- Depending on the size of your baking tray, you may be left with extra potato mixture. In this case, make one more nest.
- Bake the potatoes until they're golden brown. Turn the oven up to 425 degrees Fahrenheit (218 degrees Celsius). Place your muffin tray in the oven. Bake for about 20 to 25 minutes. When done, your potatoes should be golden brown.
- Add your eggs. Crack each egg one by one. Pour the eggs into the indents you created in your potato mixture earlier.
- Finish baking the potatoes. Place your potato mixture back in the oven. Bake for an additional 10 to 15 minutes.
Making Sweet Potato Nests with Bacon
- Bake your sweet potatoes. Set the oven to 400 degrees Fahrenheit (about 205 degrees Celsius). Bake your sweet potatoes for about 30 to 35 minutes. They should be almost tender, but not quite, when they're done.
- Peel and grate your potatoes. Allow the sweet potatoes to cool. Then, peel them using a vegetable peeler. Use a cheese grater or similar device to grate them over a mixing bowl. Add salt and pepper to taste.
- Transfer your mixture to a muffin tray. Take a muffin tray and transfer two to three tablespoons of your sweet potato mixture to each compartment. Keep going until you do not have any mixture left. The precise amounts this makes vary depending on the size of your muffin tray. Make a nest shape with your fingers in each sweet potato muffin.
- Bake your sweet potato muffins. Place the muffin tray in the oven. Let the sweet potatoes bake for 10 minutes.
- Add your eggs to the muffins. Gently crack an egg into each nest. After the egg is secure in the sweet potato nest, sprinkle the top with fresh chives.
- Cook your eggs. Place the sweet potato nests back in the oven. Cook them for 10 to 12 more minutes.
- Add bacon. Take your bacon crumbles. Sprinkle the crumbles evenly across each sweet potato nest.
Making Cinnamon Sweet Potato Nests
- Shred your sweet potato. Use a food processor to shred your sweet potato. Shred the potato until it's in fine strands, moldable you can easily transfer to the muffin tin.
- Add your sweet potato to a muffin pan. Spray your muffin pan with a no-stick spray. Fill each compartment of the muffin tin with your shredded sweet potato. Use your fingers to press small indents on the sweet potato muffins so you can fill these later.
- Bake your sweet potatoes. Place the muffin tin in the oven. Bake your sweet potatoes at 375 degrees Fahrenheit (about 190 degrees Celsius) for 15 to 17 minutes.
- Cook your spinach. Place your spinach in a frying pan and cook it over the stove at medium heat. Mix in the garlic powder, onion powder, salt, and pepper. Then, cover your spinach and cook it for six to eight minutes.
- Fill your nests. Place your spinach mixture into each nest, leaving some headspace at the top. Fill that headspace by cracking one egg into each nest.
- Finish baking your sweet potato nests. After the nests are filled, return your muffin tin to the oven. Bake the nests for an additional 8 to 12 minutes. The longer you bake your nests, the harder your eggs will be.
