Make a Spicy Vegetarian Pasta Bolognese

This recipe is fun, versatile and quick to make. For all the vegetarians out there, you'll love this one, and for everyone else, this is a great alternative to meat and pre-packaged foods. So try this great healthy dinner now.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1 red pepper, finely chopped
  • 1 yellow pepper, finely chopped
  • 1 carrot, finely chopped
  • tin of chopped tomatoes
  • 170g organic soya mince (soaked and drained thoroughly)
  • 4 garlic clove, crushed
  • Spices (use these according to taste for mild-medium spice):
  • 2 tsp chilli powder
  • 2 tsp ground cumin
  • 3 tsp paprika
  • Herbs (use these according to taste):
  • 1/2 tsp oregano
  • 1 tsp basil
  • Salt & black pepper to taste
  • 250g uncooked pasta spirals (for a healthier version use rice/corn pasta)

Steps

  1. Place {{safesubst:#invoke:convert|convert}} of water in a large pan and begin to boil.
  2. Heat 1 tbsp of olive oil in a large frying pan and add the chopped onions and pre-soaked soya mince. Cook on a medium heat for 5 minutes.
  3. Add the spices, vegetables, 200g of chopped tomatoes and garlic to the pan. Cook on low heat for 20 minutes or until the excess water has evaporated.
  4. Add the uncooked pasta spirals to the pan of boiling water along with sea salt. (Do not add oil, oil just rinses away when draining the pasta. Salt will add flavor.)
  5. Cook according to packet instructions.
  6. Add the remaining chopped tomatoes to the soya mixture; stir well and heat gently for 2-3 minutes.
  7. Drain the pasta once it's cooked, serve on a plate and top with the desired amount of soya mixture.
  8. Finished.



Tips

  • Okara (soy pulp that remains after preparing soy milk) can be used instead of "pre-soaked soya mince".
  • To keep pasta from sticking add a spoonful of sauce and stir it in until coated.
  • Keep a cup of pasta water to add to your sauce to add flavor and body to it.
  • For spicier sauce, add a dash of cayenne powder to the oil when sauteing the garlic.
