Make a Chicken Quesadilla

Quesadillas are quick, easy, and packed with flavor. The cheesy interior melts scrumptiously in your mouth, while the browned tortilla on the outside provides a crunchy texture. It's pretty much the perfect snack food, although many people choose to make it into a meal of its own. Whether you're making a chicken quesadilla for yourself or for others, these recipes are sure to please.

Ingredients

Standard Chicken Quesadilla

  • Boneless and diced chicken
  • 1 ounce Fajita Seasoning
  • 1 teaspoon Vegetable Oil
  • 1 green and 1 red pepper, chopped
  • 1/2 onion, chopped
  • 1 six-inch flour tortillas
  • Mexican cheese, shredded

Santa Fe Chicken Quesadilla

  • 2 6-inch flour tortillas
  • 1/2 onion, sliced
  • 1/4 cup cooked and diced chicken
  • 1/4 cup black beans, drained
  • 1/4 cup corn
  • 2 teaspoons fresh cilantro, finely chopped
  • 1/4 cup diced avocado
  • 1/2 cup shredded Mexican cheese

Servings: 1 whole quesadilla | Total Time: 20 minutes

Steps

Standard Chicken Quesadilla

  1. Grease a baking sheet with a neutral cooking spray.
  2. Mix the chicken with the fajita seasoning. Spread it on the greased baking sheet. Place it under a broiler for about five minutes. When the chicken has some color on the outside, remove it from the broiler and dice into smaller pieces. The chicken may still be undercooked at this point.
  3. Preheat the oven to 350 degrees F (177 degrees C).
  4. In a large saucepan, heat the oil over medium heat. Mix it with the green peppers, red peppers, onions, and chicken. Cook the veggies for about ten minutes, making sure to remove chicken once no longer pink on the inside.
  5. Place the chicken and veggie mix onto the tortilla.
  6. Sprinkle it with cheese.
  7. Bake it for about ten minutes, or until the cheese has melted.
  8. Take the tortilla from the oven.
  9. Fold the stuffed tortilla in half.
  10. Enjoy it with a nice cerveza or a bottle of Sauvignon Blanc!

Santa Fe Chicken Quesadilla

  1. Cook your chicken if you haven't already. Many people who make chicken quesadillas used leftover chicken in their quesadillas. If you don't have pre-cooked chicken at your disposal, here are some ways that you can cook your chicken:
    • Pan-sear chicken. Season chicken with salt and pepper and begin searing it over medium heat in a well-oiled pan. To develop a nice, brown exterior, turn the heat up to medium-high just before the chicken is finished cooking.
    • Oven-roast chicken. This is a great way of cooking a whole chicken.
    • Butterfly a Chicken. Another great way of cooking a whole chicken, butterflying is a quick technique that sounds more difficult than it is. Definitely worth trying!
  2. While the chicken is cooking, sweat the onions in a well-oiled skillet over medium heat. Cook until onions are aromatic and translucent, about 4 minutes.
  3. Add the corn to the onions. Cook until a little bit of color develops on both the corn and the onions. Remove from skillet and set aside.
  4. Lay one tortilla flat into the bottom of the saucepan.
  5. Add onions, corn, beans, chicken, and avocado. Make sure all the ingredients are evenly spread across the bottom of the tortilla.
  6. Layer the top of the ingredients with the Mexican cheese mix
  7. Cover with the second tortilla.
  8. Cook the tortilla over medium-low heat, flipping once, until color develops on both tortillas. To expedite the process, cover the skillet with a lid while cooking.
  9. Cut quesadilla into wedges and serve. Enjoy!
