Make a Coconut Mojito

For a richer version of this refreshing summertime drink, try these topical version made with coconut.

Ingredients

Coconut Mojito on the Rocks:

Servings: 1

  • 12 mint leaves
  • 1/2 oz (15ml) lime juice, freshly squeezed
  • 2 oz (60ml) coconut rum
  • 1/2 oz (30ml) simple syrup or 1 tbsp superfine sugar
  • 1 oz (30ml) cream of coconut
  • Ice
  • Club soda

Frozen Coconut Mojito:

Servings: 2

  • 4 cups ice
  • 2-1/2 limes, rind removed
  • 7 oz (210ml) cream of coconut
  • 3 oz (90ml) white rum
  • 5 springs fresh mint leaves

Steps

A coconut mojito on the rocks

Mint, coconut rum and cream of coconut combine to create this frothy cocktail. Garnish the mojito with mint sprigs and a wedge of lime.

  1. Muddle the mint and lime juice in a cocktail shaker using either a muddler or the back of a spoon
  2. Add the coconut rum, simple syrup and cream of coconut to the shaker.
  3. Add ice about 3/4 of the way full.
  4. Seal the cocktail shaker and shake it until condensation forms on the exterior.
  5. Strain the drink into a highball glass.
  6. Top the drink with club soda until the glass is full.

A frozen coconut mojito

For an icy taste of summer, combine white rum, cream of coconut and mint to create this frozen coconut mojito. Margarita glasses are recommended, but you can choose the glass of your choice.

  1. Place all of the ingredients into a blender and puree them until the mixture is smooth.
  2. Pour the mix into margarita glasses and garnish the glasses with fresh mint sprigs and a lime wedge.

Tips

  • If you don’t have access to cream of coconut for the mojito on the rocks, simply add another ounce of coconut rum to the drink. The cream of coconut is essential in the frozen coconut mojito.
  • To make your own simple syrup, cook 1 part of water and 1 part of sugar over medium heat until the sugar dissolves completely. Cool the syrup and add it to your mojito.
  • You can rim your highball glass with shredded coconut, if desired.
