Make your own simple syrup infused with mint. Then, assemble the mojitos in the pitcher before your party. Add the ice and club soda just before you serve the drinks.

Make Mint Simple Syrup

  1. Pour the water, sugar and mint leaves into a saucepan.
  2. Bring the mixture to a boil and simmer it for 5 minutes, stirring it occasionally with a whisk to help the sugar to dissolve.
  3. Remove the syrup from the heat and cool it for at least 20 minutes before you add it to the mojito recipe.

Make the Pitcher of Vodka Mojitos

  1. Pour the vodka, mint simple syrup and lime juice into a pitcher.
  2. Stir the ingredients with a whisk.
  3. Add ice to fill the pitcher about 3/4 of the way to the top.
  4. Top the pitcher with the cup of club soda right before you serve the drinks and stir it gently to blend the ingredients.
  5. Serve the drinks in highball glasses.

Tips

  • Taste the simple syrup and vodka mixture before you serve the mojitos. If the drink is not sweet enough, add additional simple syrup or superfine sugar. You can also substitute lemon-lime soda for club soda to give the mojitos additional sweetness.
