Make a Marzipan Bunny

Modeling with marzipan is a very easy way to create figurines that can be eaten. Marzipan is a combination of sugar and almond meal, and it is often shaped into little fruits. For Easter, a marzipan bunny is an ideal delight to give as gifts and to place on the Easter table as edible decorations. These can also be added to a cake as a topper.

Ingredients

  • Marzipan
  • Food colouring (choose colours for eyes, whiskers and paws, etc. to suit your preference)
  • Egg whites (choose pasteurized egg whites if concerned about their origin/safety)––if you really don't want to use egg white, you could try sugar syrup to set the marzipan pieces

Steps

  1. Buy some marzipan. Marzipan should be available from quality grocery stores and stores that supply confectionery or cake making products. If you can't find it in a store, you can order it online.
  2. Take a piece of marzipan and roll into two balls. Make a bigger ball for the bunny's body and a smaller one for the bunny's head.
  3. Mould the two balls into the shape of cones.
  4. Pinch the bunny's face cone to form the nose and two ears.
  5. Take some more marzipan. Make two rolls to form the front and hind legs.
  6. Taking the roll made for the front legs, place it underneath the rabbit's body so that equal lengths are poking out of each side. Mould into the shape of paws.
  7. Repeat the same placement of the legs at the back.
  8. Paint the base of the bunny with the egg white. Leave this to set so that the marzipan pieces all stay in place.
  9. Paint the eyes, mouth, nose, ears, whiskers and paws with food colouring of your choice to add realistic characteristics. The bunny is now ready to use as a decoration or gift.

Tips

  • If you want, you can add a little food colouring to the marzipan you begin with to make your bunny any colour you want.
  • If giving as a gift, place inside clear cellophane and tie with a pretty ribbon.

Warnings

  • Marzipan also uses egg whites.
  • Marzipan contains almonds and almond extract so be aware of this for people with nut allergies. It is also possible to get lesser quality marzipan made from soy and almond essence, which can be problematic for those with soy allergies.
  • Work with freshly washed hands; if you leave and come back to shaping, wash again.
