Prepare Buckwheat Cereal
Breakfast should ideally help you start your day with focus and energy. Unfortunately, sugar-loaded cereals often don't do the job. For a more substantial, nutritious breakfast, consider buckwheat. Buckwheat contains all eight essential amino acids, leaving you more satisfied and better-nourished than the average breakfast cereal. It's also gluten free! Ingredients
- 1 cup of hulled buckwheat, preferably organic
- 3 cups of water
- pinch of salt
- 1 T of butter or cream
- flavorings i.e. shredded coconut, crushed walnuts or almonds, fresh cut-up fruit, jam, yogurt, honey, maple syrup etc.
Steps
- Bring water to boil in 2-quart pot.
- Add salt and buckwheat.
- Lower the heat and stir frequently to prevent the buckwheat sticking to the bottom.
- Simmer for about 15–20 min or until water has been absorbed. Buckwheat groats should be tender but not mushy.
- Stir in butter or cream if desired.
- Scoop into bowls, top with your choice of flavorings and enjoy your breakfast knowing that you are doing something good for your health!

Tips
- Most of us don't have much time to cook in the morning but you can speed the process: Boil all needed water in the evening, take the pot of the heat and place buckwheat in hot water. It will take less time to finish the next morning.
- Some stores carry organic buckwheat in bulk (roasted or unroasted) and it is relatively inexpensive.
