Baked Lemon Chicken
- 1/4 cup extra-virgin olive oil
- 3 tablespoons minced garlic
- 1/3 cup dry white wine
- 1 tablespoon grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 1/2 teaspoons dried oregano
- 1 teaspoon minced fresh thyme leaves
- 4 boneless chicken breasts, skin on

- 2 tablespoons Dijon mustard
- 1/2 teaspoon chopped thyme leaves

- 3/4 cup breadcrumbs
- Salt and pepper

Baked Chicken with Capers
- 4 boneless, skinless chicken breast halves
- 1 lemon, juiced
- 1/4 cup melted butter
- 1/4 cup steak sauce
- 2 tablespoons jar capers

Steps
Baked Lemon Chicken
- Preheat the oven to 400 degrees F (204 degrees C). Rinse the chicken breasts and pat them dry. Set aside.
- Place a small saucepan over medium-low heat and add the olive oil. Once the olive oil has heated, add in the garlic and cook for one minute, then remove the pan from heat.
- Add the white wine, lemon zest, lemon juice, oregano, and thyme. Pour the mixture into a baking dish.
- Place the chicken breasts skin side up over the sauce. Drizzle some olive oil over the breasts and sprinkle them salt and pepper.
- Bake in the oven for 30-40 minutes. Chicken should be lightly browned when finished. To determine whether the chicken has cooked through, use a knife to make sure that the center of the breast is no longer pink.
- Remove the baking dish from the oven and cover. Allow the chicken to cool for 10 minutes, and then serve.
- Drizzle some of the lemon and white wine sauce over the chicken to add extra moisture and flavor.
Baked Parmesan-Crusted Chicken
- Preheat the oven to 450 degrees F (232 degrees C). In a medium bowl, combine the mustard, cayenne pepper, and 1/2 teaspoon of salt. Add the chicken breasts and toss them in the sauce.
- Mix the Parmesan and breadcrumbs together in a plate. Dip the chicken into the mixture to evenly coat each piece.
- Spray a baking dish with cooking spray and place the chicken inside. Bake for 20 minutes, or until chicken is lightly browned and cooked through.
- Remove from the oven and allow to cool. Serve and enjoy!
Baked Chicken with Capers
- Preheat the oven to 425 degrees F (220 degrees C). In a small bowl, mix together the melted butter, steak sauce, and capers.
- Place the chicken breasts in a medium-sized baking dish. Pour the mixture evenly over the chicken, making sure each piece is coated.
- Cover the baking dish and bake for 25-30 minutes. Chicken should be lightly browned and the insides should no longer be pink.
- Allow to cool for about 5 minutes and then serve. Drizzle any remaining liquid from the baking dish over the chicken.
