Make Barbecued Chicken Lettuce Wraps

Are you having a hard time deciding what to make for lunch? Barbecued Chicken Lettuce Wraps are a delicious and healthy choice for any meal!

Ingredients

  • 4 Trocadero lettuce leaves, or any soft lettuce
  • 1 carrot
  • a few mint sprigs
  • a few basil leaves
  • a few coriander sprigs
  • a few long chives, or the green part of a spring onion
  • 1 chicken breast
  • 8 Tbsp soy sauce
  • 6 Tbsp orange juice
  • 2 garlic cloves, minced
  • 3 Tbsp brown sugar
  • 1 bowl of iced water

Steps

  1. Gather the ingredients that you will need.
  2. Make the glaze - Put a saucepan over medium heat and combine the soy sauce, orange juice, garlic and brown sugar into the pan. Bring the mixture to a boil and leave it to reduce the quantity by half, which takes about five minutes and then take the pan off the heat.
  3. Cook the chives - Fill a saucepan halfway full of water and bring it to boil. After the water is boiling add the chives, give them a little stir and cook for one minute. After removing the chives put them into a bowl of iced water for 20 seconds.
  4. Barbecue the chicken - Brush one side of the chicken with the glaze and put it on the grill. Continue glazing and turning the chicken until it is cooked.
  5. Cut the chicken - Slice both pieces of chicken in half, lengthwise and set aside.
  6. Make the wraps - Put one slice of chicken, a few carrots, a little coriander, basil and mint on top of a piece of lettuce and roll the wrap up.
  7. Serve your wraps - Place your wraps on serving dishes and drizzle glaze onto the top of the wraps.
  8. Finished.



Tips

  • When making your wraps you may wish to put two chives underneath the wrap and tie them in a knot, but don't pull too hard so you break them.
  • This recipe will make enough for 2 people. You may have to adjust the recipe depending on the number of people eating.
