Cook Jamaican Rice and Peas

Rice and peas is a popular dish in Jamaica. It is also very nutritious and is usually made from rice (white or brown) and kidney beans or "red peas" as they're colloquially called in Jamaica. Feel free to combine with any meat of your choice.

Ingredients

  • 1 cup of kidney peas (may vary if you like a lot of peas)
  • 1 lb rice
  • 2 stalk of escallion
  • Thyme
  • 2 tsp salt
  • Coconut milk
  • Small piece of beaten ginger
  • Garden pepper or scotch bonnet pepper
  • Water

Steps

  1. Wash peas and place in a pot with water, ensure peas are totally immersed. One and a half cups of water should be sufficient.
  2. Place on medium heat and cover pot. Check on peas occasionally, and add more water if necessary. When peas are cooked, they should be soft enough to penetrate with a fork.
  3. Add coconut milk. This can be bought pre-packaged or prepared from scratch:
    • Obtain one dried coconut and dice it.
    • Place in blender cover with water. Select blend or grate.
    • Repeat until desired texture is reached.
    • Pour into a strainer, over collecting bowl, squeeze excess milk from coconut.
    • Discard coconut.
  4. Add salt (optional), escallion, thyme, garden pepper, and ginger-optional.
  5. Add rice, and ensure the water is adequate. Stir ingredients together with a fork. When water starts boiling again, reduce heat and cook on a slow fire. When cooked rice should be tender and all water absorbed. If rice is not tender, do not add more water at this stage. Instead, cover over rice with plastic wrap and maintain on very low heat for 10 minutes.

Tips

  • Ensure liquid is about 2-2 1/2 times the amount of rice.
