Make a Coconut Bombay Stir Fry
This is an easy recipe that can always be at hand for the person who doesn't like to make a special trip to the shop to cook something nice. It uses everyday frozen foods that are versatile and keep.
Ingredients
- Olive oil.
- Frozen minced chicken or beef.
- frozen mixed peppers.
- frozen mushrooms.
(all frozen items should preferably be thawed out - microwave with a little water for 1 minute OR leave at room temperature for about 20 minutes)
- 1/2 onion.
- Coconut milk (powdered works, but fresh milk is the best choice. The browner the coconut, the better. Don't worry about the hairs.)
- Bombay mixed spices.
- Soy Sauce.
- Pasta spaghetti or rice
Steps
- Turn up heat to high, and place a large wok on.
- Pour in about {{safesubst:#invoke:convert|convert}} of olive oil and heat a little.
- Add the mushrooms, onions and wait until they start to sizzle.
- If serving with rice, start cooking the rice in a separate pot now.
- Stir some mixed peppers in for about 2 minutes.
- If serving with pasta, start cooking it separately now.
- Mix in the desired amount of mince chicken or beef, and allow to completely turn brown. You may need to add very small amounts of water at this point to prevent sticking (warm water from the kettle is best).
- Now add about 1.5 - 2 cups of coconut milk and sprinkle liberal amounts of Bombay spices. Stir in well, making sure it doesn't stick while cooking.
- Turn heat down to less than half, and add some soy sauce to balance the sweet/sour flavor of the coconut - just mix in and taste after a while to test.
- Allow to simmer on low heat for at least 5 minutes, stirring occasionally.
- When pasta or rice is ready, use this at the outer rim of the plate and serve the above mix in the center.
Tips
- Add some lemon for a sharper flavor.
- Try Garlic salt if you don't like soy sauce.
- Frozen spinach at the beginning is another variation.
- You can experiment so much with this recipe with differing ingredients.
- Add some plain yogurt for a creamy texture.
- Instead of mince meats, add party size sausages at the beginning.
Warnings
- You may get best results from stainless steel pans.
- Always feel the bottom of the pan when stirring, checking for stick. If you notice burning, add some water VERY slowly and work it in - it will take it right off.
