Tips
- An alternative version of this recipe can be made by reducing the 3 cups (709 ml) of water to 2 cups (472 ml) making the finished product much thicker. Store it in the refrigerator until it is cool, then form it into patties and fry them in butter or oil for a crispy, chewy treat.
- You can substitute half and half or coconut milk for the milk in this cornmeal porridge recipe. Half and half will make your porridge creamier and both can add richer flavor.
- To add a bit of sweetness to your homemade cornmeal porridge, try adding 2 tbsp. (30 ml) of granulated sugar, brown sugar or honey. Sugar substitute can also be used. Just make sure to check the package label for the appropriate amount that would be equal to 2 tbsp. (30 ml) or to your taste.
- For a different texture, toss in a handful of raisins, dried bananas or dried cranberries. A few pecans or walnuts can add some crunch to your porridge. Fresh blueberries or strawberries might make a nice addition, as can shredded coconut.
- For a more savory dish, try adding butter, cheese, herbs, salt and/or pepper.
