Make Boston Baked Beans
Warms you right up in the middle of winter. A family favorite!
Ingredients
- 2 pounds Navy beans
- 1 tsp dry mustard
- 2 tsp salt
- 1/4 tsp pepper
- 1 onion, chopped
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1/2 cup ketchup
- 4 or 5 slices of bacon cut in pieces (optional)
Steps
- In a large pot, cover beans with cold water and let sit overnight.
- In the morning, bring to a slow boil, reduce heat and simmer for about one hour.
- Drain beans, reserving cooking water.
- Place beans in a large crock or covered casserole.
- Combine the mustard, salt, pepper, onion, sugar, molasses, and ketchup with one cup of the reserved water.
- Pour over the beans and add more water if necessary to cover.
- Stir in the bacon pieces.
- Cover the crock and bake at 250F for 6 - 8 hours.
- Add boiling water as needed to keep the beans moist.
