Cook Vegetable Curry
Hungry? Here's a how to guide for making a quick simple inexpensive but authentic vegetable curry.
Steps
- Chop the onions and garlic and grind them well. Fry the onions until golden brown, along with ginger and garlic.
- Cube potatoes and other vegetables.
- Add the vegetables to the fried onion mixture, then add Cumin powder, Coriander powder, Turmeric,Paprika, 2-3 freshly chopped Chillies, plus a little Salt; also add a little toasted Cumin powder. A small amount of Cinnamon and/or Fennel powder can be added as an option if desired. Fry these with the vegetables and onion mixture until well coated.
- Mix water with vegetable stock cubes (optional). Add a handful of freshly chopped coriander and simmer gently for 15-20 minutes.
- Serve with pilau or plain rice, a bread, Naan or Chapati and some chutney. Add yogurt after cooking, as well as tamarind paste.
Tips
- Don't burn the spices or the vegetables when you have mixed them with the fried onions.

- Be sure to wash your hands before preparing food and after you have chopped fresh Chillies.

- 2-3 medium sized onions

- 3-4 cloves of garlic
- 1 heaped teaspoon each of Cumin, Coriander, Turmeric, Paprika
- 2-3 Fresh Chillies
- salt
- toasted cumin powder
- cinnamon powder or fennel powder (optional)
- 2 cups water
- 2 vegetable stock cubes (optional)
- 4-5 potatoes
- freshly chopped coriander
- 1 teaspoon tamarind paste
- yogurt
- rice
- bread (Naan or Chapati) and chutney
- 3-4 carrots, 1-2 cups of beans, peas, any other blend of vegetable you may have on hand
