Make Brinjal Curry in Andhra Style
Brinjals are used to make many varieties of curries-gravy as well as dry ones in Andhra Pradesh. In this article, you will see how to make simple and easy curry with them in Andhra style.
Ingredients
- 2 tablespoons oil
- 00 grams water
- 400 grams chopped brinjals
- 1 teaspoon salt
- 3 tablespoons Andhra Curry powder
Steps
- Place a frying pan on an induction stove.
- Add oil into it.
- Add chopped pieces of brinjals.
- Stir and fry them for sometime.
- Cover the pan with a lid and cook on a very low flame.
- Add salt and stir.
- Sprinkle Andhra curry powder and stir again.
- Cover with the lid again so that the curry powder blends with the brinjal pieces.
- Serve with rice (ghee added) or rotis.
Tips
- Add crushed garlic and ginger as it would enhance the flavor. Typical Brahminical Andhra food avoids garlic, onions and ginger.
