Make Brinjal Curry in Andhra Style

Brinjals are used to make many varieties of curries-gravy as well as dry ones in Andhra Pradesh. In this article, you will see how to make simple and easy curry with them in Andhra style.

Ingredients

  • 2 tablespoons oil
  • 00 grams water
  • 400 grams chopped brinjals
  • 1 teaspoon salt
  • 3 tablespoons Andhra Curry powder

Steps

  1. Place a frying pan on an induction stove.
  2. Add oil into it.
  3. Add chopped pieces of brinjals.
  4. Stir and fry them for sometime.
  5. Cover the pan with a lid and cook on a very low flame.
  6. Add salt and stir.
  7. Sprinkle Andhra curry powder and stir again.
  8. Cover with the lid again so that the curry powder blends with the brinjal pieces.
  9. Serve with rice (ghee added) or rotis.

Tips

  • Add crushed garlic and ginger as it would enhance the flavor. Typical Brahminical Andhra food avoids garlic, onions and ginger.
