Make French Beans Curry in Andhra Style

This is one special way to prepare French beans, based on the Andhra style curry from India. It's a tasty, spicy and warming dish suitable as a meal on its own or as a side dish for a dinner party.

Ingredients

  • 250 grams/8.8 oz French beans, chopped
  • 100 grams/3.5 oz fresh coconut, grated
  • 1 teaspoon salt (or to taste)
  • 3 whole and dried red chilies
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon white lentils
  • 2 teaspoons oil
  • 500ml/16.9 fl oz water

Steps

Preparing the French Beans

  1. Add the chopped French beans to a mixing bowl, colander or saucepan.
  2. Wash the beans thoroughly under running water.
  3. Drain the water with the help of your palm. If you are using a colander, the water will self-drain.
  4. Add fresh water to a saucepan. Add enough to cover the beans.
  5. Boil the French beans until just tender.

Frying the French Beans Curry

  1. Add the oil to a large frying pan. Add the red chilies, mustard seeds, cumin seeds and white lentils. Saute these ingredients together.
  2. Add the boiled French beans.
  3. Add salt to taste. Mix well.
  4. Sprinkle the grated fresh coconut over the beans.
  5. Mix well.
  6. Serve the French beans curry with rice or a flatbread like roti.

Tips

  • When preparing the French beans, using the saucepan to wash the beans can save washing up an extra dish.
