Make Cake Mix Cookies

Make easy cookies with the kids by using a packet of cake mix and turning it into cookies instead of a cake. Though the combination is up to you, here are some simple tips on how to go about your standard cake mix cookie.

Ingredients

  • 1 box of your favorite cake mix (18 1/4 oz.)
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 tsp. vanilla extract (optional)
  • 12 oz. chocolate or other flavored chips (optional)
  • 3/4 cup nuts (or any other addition)

Steps

  1. Preheat oven to 350ºF (180ºC). Prepare cookie sheets by spraying with non-stick spray or lining with parchment paper.
  2. Combine cake mix, 2 eggs, and 1/2 cup of vegetable oil in a large bowl. If you used an unflavored cake mix like yellow or white then add 1 tsp. (5 g) of vanilla. Mix thoroughly with a large spoon.
    • Use your imagination! Spice cake, Red Velvet, and Devil's Food all make great cookies, too!
  3. Mix in chocolate chips or nuts if desired. This is the part where your cookies look truly homemade -- add anything in that you think will be delicious.
    • Mini peanut butter cups, M&Ms, sprinkles, cranberries, and coconut all work just as well (if not better!).
  4. Spoon teaspoonfuls of the mixture onto cookie sheets, about a dozen cookies per sheet. They will spread when baking, so leave some room between each cookie.
    • If it appeals to you, roll the dough in sprinkles before baking. Don't worry! The sprinkles retain their color and shape. You don't need frosting to add in sprinkles, thankfully.
  5. Bake for 8 to 10 minutes. If your oven cooks unevenly, flip them halfway through.
  6. Let cool and then take off cookie sheet using a spatula. Place onto a wire rack to cool completely. Top with frosting if it meshes well with the cake mix you used.
  7. The recipe yields 2 to 3 dozen cookies. Bring them to any occasion and tell everyone you made them yourself!

Tips

  • Instead of using chocolate chips, try white chocolate, peanut butter, or butterscotch chips.
  • For Christmas or Valentine's Day cookies, try Red Velvet cake mix with white chocolate chips.
  • Use Devil's Food cake mix with peanut butter chips and it'll taste like a peanut butter brownie.
  • Use any cake mix with dried cranberries and white chocolate chips; it will taste like ranger cookies.
  • Try filling chocolate cookies with icing or marshmallow cream to make a sandwich cookie.
  • For pumpkin chocolate chip cookies add 1/2 can of canned pumpkin and 1 tsp of pumpkin spice. bake these cookies at 350 for about 10 minutes.

Warnings

  • Watch them closely - they burn very easily.
  • The oven is hot! If making with children, supervise oven use.
