Make No‐Bake Chocolate Oatmeal Cookies

Need to make a quick batch of cookies? Then here's a recipe to make a batch of cookies with 30 minutes of prep time. Once they cool and set, you'll have a tasty treat to enjoy!

Ingredients

  • Servings: 2 dozen
  • 1 stick (1/2 cup or 115 g) butter or margarine
  • 1/2 cup (120 ml) milk
  • 2 cups (400 g) sugar
  • 1/2 cup (60 g) cocoa
  • 2 tsp. (10 ml) vanilla extract
  • 1/2 cup (130 g) peanut butter (optional)
  • 3 cups (245 g) of quick-cooking oats

Steps

  1. Line a baking sheet with parchment paper and set it aside.
  2. In a large 3-quart saucepan, combine the butter or margarine, 1/2 cup of milk, 2 cups sugar, and 1/2 cup cocoa.
  3. Place the pan over medium heat and stir the ingredients constantly until the mixture comes to a full rolling boil.
  4. Boil the mixture for exactly one minute and then remove it from the heat. Timing is very important in this recipe.
  5. Stir in 2 teaspoons of vanilla extract, 1/2 cup of peanut butter (optional), and 3 cups of quick/minute oats. Mix everything together well.
  6. Drop a spoonful of the batter onto the cookie sheet.
  7. Refrigerate the cookies for an hour to 90 minutes before serving.



Tips

  • A rolling boil is a boil that does not stop bubbling when stirred.
  • A quick way to grease the dish the mixture will be poured into is to spray it with cooking spray.
  • You can also just pour or scoop into piles and let cool.
  • You may need to adjust the timing slightly at higher altitudes. 1 minute works well at sea level, but you may need to increase it. If you can, experiment with this recipe a few times before making a batch you critically need so you know how long to boil it.

Warnings

  • Watch your timing. If you boil too long, the cookies will crumble. If you don't boil long enough, they will be gooey and will not harden.
