Make Great Northern Bean Soup
A good, hearty bean soup that goes great with cold weather and bread.
Ingredients
- 1 white onion, medium to large size
- 1 tablespoon olive oil
- 1 pound Great Northern beans
- 1 ham shank, sliced into three sections. (Hocks work, but tend to be fatty)
- 64 ounces chicken broth
- Oregano or celery leaves
- Garlic powder
- Pepper corns
Steps
- Dice onion.
- Sauté in olive oil.
- Add ham shank.
- Add Great Northern beans that have been soaked overnight.
- Add chicken broth, one teaspoon each garlic and oregano.
- Add freshly ground black pepper to taste.
- Bring to boil, cover, turn to low and let simmer for two hours, or until beans are soft and shanks are falling off the bone.
- Remove ham shanks and bones. Dice or pull meat apart, adding it back to soup.
- Serve with dinner rolls or crusty bread.
Tips
- Before serving, mash some of the beans at the bottom of the pot and stir. This gives the broth a creamier consistency.
- Make Sweet Corn Bread or muffins would go well with this meal too.
- Smoked turkey works well in place of ham, but tends to be stringy.
- If using fresh pork instead of ham, soup may need some salting.
- Serving soup over a piece of buttered, crusty bread makes for a great comfort-food dish in the colder months.
- Celery leaves can be used in place of oregano.
Warnings
- Be sure to cool all soups rapidly before refrigerating. Add a few ice cubes to hurry the process.
