Make Great Northern Bean Soup

A good, hearty bean soup that goes great with cold weather and bread.

Ingredients

  • 1 white onion, medium to large size
  • 1 tablespoon olive oil
  • 1 pound Great Northern beans
  • 1 ham shank, sliced into three sections. (Hocks work, but tend to be fatty)
  • 64 ounces chicken broth
  • Oregano or celery leaves
  • Garlic powder
  • Pepper corns

Steps

  1. Dice onion.
  2. Sauté in olive oil.
  3. Add ham shank.
  4. Add Great Northern beans that have been soaked overnight.
  5. Add chicken broth, one teaspoon each garlic and oregano.
  6. Add freshly ground black pepper to taste.
  7. Bring to boil, cover, turn to low and let simmer for two hours, or until beans are soft and shanks are falling off the bone.
  8. Remove ham shanks and bones. Dice or pull meat apart, adding it back to soup.
  9. Serve with dinner rolls or crusty bread.



Tips

  • Before serving, mash some of the beans at the bottom of the pot and stir. This gives the broth a creamier consistency.
  • Make Sweet Corn Bread or muffins would go well with this meal too.
  • Smoked turkey works well in place of ham, but tends to be stringy.
  • If using fresh pork instead of ham, soup may need some salting.
  • Serving soup over a piece of buttered, crusty bread makes for a great comfort-food dish in the colder months.
  • Celery leaves can be used in place of oregano.

Warnings

  • Be sure to cool all soups rapidly before refrigerating. Add a few ice cubes to hurry the process.
