Make Tortellini Soup With Tomatoes and Italian Sausage

This recipe outlines how to make a delicious, large batch of Tortellini soup. This is a hearty soup that is even better as leftovers! Makes 8 (1 1/2 cup) servings.

Ingredients

  • 1 lb Italian sausage
  • 1 cup coarsely chopped onions
  • 2 garlic cloves, sliced
  • 5 cups beef broth
  • 1/2 cup water
  • 1/2 cup dry red wine or water
  • 2 cups (4 medium) chopped seeded peeled tomatoes
  • 1 cup thinly sliced carrots
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried oregano
  • 1 (8 oz) can tomato sauce
  • 1 1/2 cups sliced zucchini
  • 2 cups (8 oz) fresh meat- or cheese-filled tortellini
  • 3 tablespoons chopped fresh parsley
  • 1 medium green bell pepper, chopped into {{safesubst:#invoke:convert|convert}} chunks
  • 1/2 cup grated Parmesan cheese

Steps

  1. If the sausage comes in a casing, remove if desired. Brown the sausage in a {{safesubst:#invoke:convert|convert}} Dutch oven over medium heat.
  2. Remove the sausage; reserve {{safesubst:#invoke:convert|convert}} of drippings in the Dutch oven. Cook the onions and garlic in the reserved drippings until the onions are tender. Add cooked sausage, broth, water, wine, tomatoes, carrots, basil, oregano and tomato sauce. Bring to a boil. Reduce heat; simmer 30 minutes.
  3. Skim any fat from the soup. Stir in zucchini, tortellini, parsley and bell pepper.
  4. Simmer an additional 20 to 25 minutes or until the tortellini is tender. Ladle servings into bowls. Sprinkle each serving with Parmesan cheese.
  5. Finished.

Tips

  • To speed up cooking time, cook the tortellini at the same time that you are doing the first step and add it when the rest is ready.
  • If you like spicy foods, buy a spicier Italian sausage. If you don't like spicy foods, buy a mild Italian sausage.
