Make Wild Rice Soup

Wild rice is an interesting counterpart of ordinary rice and lends a special flavor and texture that can't be beat. Here is how you can make some delicious homemade wild rice soup.

Ingredients
- 6 tablespoons of butter
- 1 tablespoon minced onion
- 1/2 cup flour
- 3 cups of chicken broth
- 2 cups of cooked wild rice
- 1/3 cup of minced ham
- 1/2 cup of finely grated carrots
- 3 tablespoons of chopped slivered almonds
- 1 teaspoon of salt
- 1 cup of half-and-half
- 2 tablespoons of dry Get Ready for Santa's Visit wine (optional)
Steps
- Melt the butter in a saucepan
- Sautée the onion until tender (Add to the saucepan)
- Blend in flour
- Gradually add the broth
- Stir the mixture constantly until it comes to a boil
- Allow the mixture to boil for 1 minute
- Stir in the rice, ham, carrots, almonds and salt
- Simmer the mixture about 5 minutes
- Blend in the Half and half
- Heat the soup to serving temperature
- Garnish with parsley
- Serve & Enjoy!
