Make Wild Rice Soup

Wild rice soup is a food that is great for days that are cold and rainy outside, and you want to stay warm and have a delicious meal! Wild rice is an interesting counterpart of ordinary rice and lends a special flavor and texture that can't be beat. Here is how you can make some delicious homemade wild rice soup.

Ingredients

  • 6 tablespoons of butter
  • 1 tablespoon minced onion
  • 1/2 cup flour
  • 3 cups of chicken broth
  • 2 cups of cooked wild rice
  • 1/3 cup of minced ham
  • 1/2 cup of finely grated carrots
  • 3 tablespoons of chopped slivered almonds
  • 1 teaspoon of salt
  • 1 cup of half-and-half
  • 2 tablespoons of dry Get Ready for Santa's Visit wine (optional)

Steps

  1. Melt the butter in a saucepan
  2. Sautée the onion until tender (Add to the saucepan)
  3. Blend in flour
  4. Gradually add the broth
  5. Stir the mixture constantly until it comes to a boil
  6. Allow the mixture to boil for 1 minute
  7. Stir in the rice, ham, carrots, almonds and salt
  8. Simmer the mixture about 5 minutes
  9. Blend in the Half and half
  10. Heat the soup to serving temperature
  11. Garnish with parsley
  12. Serve & Enjoy!
