Make Low Calorie Cole Slaw
Coleslaw used to be the side dish of choice for picnics and beach parties. Today, it can enhance the best of dinners, sandwich, or stand alone as a side salad. Not only is it fast and easy to make, it is also economical, nutritious, delicious and is low in calories.
The whole recipe is only 280 calories! Go nuts!
Ingredients
- 16 ounce bag of shredded cabbage (in the produce department)
- 2 medium or 1 large, fresh carrot
- 3/4 glass white vinegar
- 3/4 glass 1% milk
- 3 Tbsp mayonnaise, reduced fat
- Salt & Pepper to taste
- 2 - 3 packets of no calorie sweetener (like Splenda)
Steps
- Cut open the bag of shredded cabbage and toss into a large mixing bowl.
- Grate the large carrot into the cabbage. Be sure to remove the top greens and peel the carrot with a potato peeler.
- Pour the white vinegar and milk mixture together into one glass or bowl and add sugar, Do a pinkie taste-test of the mixture in the glass before pouring it into the cabbage. This is to determine if you might need a little more or less of any any of the ingredients. If satisfied, pour and stir onto the cabbage. Stir in mayonnaise, folding it in gently.
- Season with salt and pepper to taste.
Tips
- The cabbage mixture creates it own liquid, so it is best to prepare it early and keep in the refrigerator overnight before serving. This also softens the cabbage.
- Store the coleslaw mixture in a flat, plastic container, ensuring the cover is sealed tightly. Turn it over once in a while, so that the salad will remain mixed well.
- If the mixture needs more liquid, you can add a little more vinegar and milk. Wait until the next day, as cabbage creates its own liquid.
- To pinkie taste, dip your pinkie into the liquid and taste your pinkie (Wash your hands first!). If it tastes too tart, add a bit of water. if not tart enough, add more vinegar. Everyone has different ideas, but use your own and season to taste.
