Make Nutella Frosted Cupcakes

This is an adaptation from a Donna Hay recipe. Donna Hay is renowned for simple but effective recipes that look good and taste good! These cupcakes have a gorgeous swirl on top created by the Nutella topping that is turned into the top with a toothpick.

The batter for these cupcakes is very short - meaning that it has a high proportion of fat to flour - and is therefore very rich. Because of this, it is very difficult to swirl the topping throughout the batter. Swirling it around the top of the cake bakes the "frosting" right in, so there is no messy goo on top. These are perfect for taking to a potluck or a picnic.

Ingredients

  • 10 tablespoons / 140 grams butter, softened
  • 3/4 cup white sugar
  • 3 eggs
  • 1/2 teaspoon vanilla
  • 1 3/4 cups /200 grams sifted all purpose or plain flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • Nutella, approx. 1/3 cup

Steps

  1. Preheat oven to 325ºF. Line 12 muffin tins with paper liners to prevent sticking.
  2. Cream together the butter and sugar. Continue creaming until the mixture becomes light; this will take about 2 minutes.
  3. Add in eggs one at a time. Add until fully incorporated. The mixture might not look smooth but that is just fine.
  4. Add the vanilla. Stir in the flour, salt and baking powder until the batter is uniform and no flour remains.
  5. Use an ice cream scoop to fill each muffin liner with batter. The liner should be three quarters full, if you're not using a scoop. Top each cake with 1 1/2 teaspoons Nutella.
  6. Swirl Nutella in with a toothpick, making sure to fold a bit of batter up over the Nutella.
  7. Bake for 20 minutes.
  8. Remove to a wire rack to cool completely.
  9. Finish off with a dollop of Nutella.
  10. Finished.

Tips

  • This recipe will make 12 cupcakes.
  • The cupcakes are tender, rich and very, very tasty. These are really perfect for anyone who doesn't like things to be too sweet. The Nutella has a nice presence. If you want something really decadent, fill the tin halfway with batter, add a teaspoon of Nutella, top with the remaining batter, add the topping, swirl and bake. However, this will make them exceedingly rich!
