Make Green Tea Cupcakes
Cupcakes are a delicacy found in cafés around the world. They exude a cross between elegance, health, and artistry. Make your own at home and impress family and friends. If you have moulds, you will be able to make the cakes appear more café-like, but using cupcake cases is also fine.
Ingredients
- 220g (2 sticks) butter
- 5 egg whites
- 160g (4/5 cup) fine sugar
- 80g (2.8 oz) flour
- 80g powdered almonds (almond meal)
- 1 teaspoon honey
- 1 teaspoon green tea (matcha)
Steps
- Preheat your oven to 180ºC/350ºF.
- Melt the butter over low heat in a heavy-based saucepan until it turns golden and smells like grilled nuts. Let it cool.
- Lightly beat the egg whites until frothy.
- Add the almond meal, sugar, flour, honey, tea and then the cooled butter. Mix to fold everything in.
- Fill moulds or cupcake cases with the mixture.
- Cook for 20 - 30 minutes.
- Remove from oven and allow to cool on a wire rack.
Tips
- Muffin tray shapes are another ideal choice for baking these cupcakes.
- These can be made with or without frosting.
- If you can get hold of a powdered almond mixture known as "l'amandine", use it. It will give the cupcakes an excellent flavour. It consists of a mixture scented with almonds, hazelnuts, and apricots.
