Make Boxed Red Velvet Cupcakes with Cream Cheese Frosting for Valentines Day

Ingredients

  • 2/3 cup of milk
  • 2/3 cup of vegetable oil
  • 1 egg
  • 4 oz. softened butter
  • 8 oz. cream cheese
  • Red velvet cupcake mix
  • Vanilla frosting mix

Baking

  1. Preheat the oven. Heat the oven to about {{safesubst:#invoke:convert|convert}}.
  2. Prepare cupcake tin. Line the cupcake tin with paper liners. Make sure that the paper liners separate and make sure that each cup only receives one paper liner.
  3. Mix wet ingredients. In a large bowl, combine 2/3 cup of Milk, 2/3 cup of vegetable oil, and one egg. You can mix manually by hand or to save time and ensure an even batter, you can use a mixer. Blend until smooth. The mixture should have a creamy and fluffy consistency.
    • Make sure hands are washed after touching raw foods such as eggs to prevent contamination or spread of diseases.
  4. Mix dry ingredients. Turn on mixer with wet ingredients at a slower pace and slowly add the red velvet mix. Put the mixer at a medium speed and mix until the red velvet cupcake batter is smooth.
  5. Divide into cupcake tin. Evenly divide the mixture into the paper lined 12-cup cupcake tin making sure that the batter does not drop anywhere else onto the tin to prevent any burnt cupcake pieces from sticking onto the tin. Use a tablespoon to easily drop the batter in.
  6. Time to Bake. Place the cupcake tin onto the top rack of the preheated oven and let bake for 25 to 30 minutes. Check on the cupcakes at 25 minutes by sticking a toothpick into the middle of one of the cupcakes at the center of the tin. The cakes are done when you can stick the middle of a cupcake with a toothpick and it comes out clean.
  7. Let them cool. When the tin is removed from the oven, it can be left on a rack for 10 minutes to allow to cool. After the 10 minutes, individually remove the cupcakes from the tin and place it on a wire rack to cool completely.
  8. Make the frosting. In a medium bowl, add 8 oz. cream cheese, 4 oz. softened butter, and vanilla frosting mix and mix at medium speed in the mixer until the mixture is smooth
  9. Decorate the cupcakes. Using a wooden kitchen spoon, scoop frosting into a zip-lock bag, squeeze the frosting onto one corner end of the bag and cut a small hole into the corner end. Spread the frosting onto the completely cooled cupcake to make a heart shape and add pink, white, and red sprinkles onto the frosting.
