Make Pinoy Cheese Cupcakes

Ingredients
- 1/2 cup softened butter
- 1/2 cup sugar
- 4 eggs
- 2 14 oz cans of sweetened condensed milk
- 3-2/3 cups flour
- 1-1/2 tsp baking powder
- 1 tbsp vegetable oil
- 1 tsp vanilla
- Finely grated or shredded cheese
Steps
- Fill 2 cupcake pans with paper cups.
- Preheat oven to {{safesubst:#invoke:convert|convert}}.
- Put baking powder and flour in a bowl. Mix them together.
- Mix cream butter and sugar in a bowl using a mixer on medium.
- Turn off the mixer and add one egg at a time, mixing on slow in between each egg.
- When all eggs are done, switch to medium speed and mix the batter well.
- Slowly and carefully add the condensed milk. Mix on medium speed for about a minute.
- Put in all the dry ingredients. Make sure to mix well in between. Add them one at a time.
- Turn the speed to medium. Add the oil.
- Add vanilla. Mix well.
- Transfer batter to cupcake cups. Leave {{safesubst:#invoke:convert|convert}} at the top. The cupcakes will rise later on.
- Put grated or shredded cheese on the top (optional).
- Bake for 25 minutes. You may add more baking time if 25 minutes is not enough.
- The cupcakes are ready to eat!
