Make Palitaw

Palitaw is chewy, sweet rice cake that is coated with sugar, coconut, and sesame seeds. Palitaw is a native Filipino dessert. It is often sold near elementary schools but adults love it too.[1] Making this yummy snack is pretty easy, so keep reading to learn how to make palitaw.

Ingredients

  • 1 cup of glutinous rice flour
  • 1/2 cup of water
  • 1/2 cup of granulated white sugar for coating
  • 1 cup of grated coconut meat for coating
  • 2 tablespoons of sesame seeds for coating

Steps

Making Palitaw

  1. Combine rice flour and water in a large bowl. Mix until the three ingredients are well combined. The ingredients should begin to form a dough as you combine them.[2] If the dough seems too sticky, sprinkle with rice flour and keep kneading. If the dough seems too dry, add a few drops of water and keep kneading. Continue to adjust the dough with flour or water until you have a cohesive dough.[2]
  2. Knead the dough until it becomes smooth and stretchy. The dough should feel smooth and dry to the touch, not sticky or wet. Then, divide the large ball of dough into small ping-pong ball sized balls. Flatten each ball into a patty.[1]
  3. Bring 2 quarts of water to a boil in a large pot. Put the dough patties into the boiling water one at a time to cook them. When the patties are cooked, they will float up to the top of the water.[2]
  4. Remove dough patties from the boiling water. As soon as the patties float to the top, use a slotted spoon to remove them and place them on a plate.[2] Allow the patties to cool down a little bit before handling them.[3]
  5. Combine the sugar, coconut, and sesame seeds in a bowl. Once the rice patties have cooled down enough to handle, coat them in the coconut mixture one at a time. Make sure that you get the coconut mixture on both sides of the patties. Press on the patties a little bit to help the mixture stick. Set each patty on a plate after you have coated it with the mixture.
  6. Serve the palitaw while it is still warm. Arrange the patties on a serving plate. Set a pair of tongs near the plate to make it easier for your guests to pick up their Palitaw.[1]

Tips

  • Try toasting the coconut and sesame seeds before you use them to coat the rice flour patties. Spread the coconut and sesame seeds on a non-stick cookie sheet and bake at 325 degrees for 5-10 minutes.[4]

Warnings

  • Be careful when placing the rice flour patties into the boiling water. Try to put them in gently so that boiling water does not splash out of the pot and burn you.
  • Do not leave the hot water unattended around children or pets.
