Make Pickled Peaches



Peaches make great pickles. This is an old recipe from the turn of the twentieth century.

Ingredients

  • 8 lb peaches
  • 4 lb white sugar
  • 1 quart vinegar
  • 1 oz cinnamon stick
  • 1 oz cloves, whole

Steps

  1. Select large firm freestone peaches.
  2. Remove the skins and put into a jar.
  3. Put the sugar, vinegar, and spices into a saucepan, let it come to a boil, skim, and pour over the fruit.
  4. Boil again. The next day pour off the syrup and boil again and pour over the peaches.
  5. Cook. Then the third day, put the fruit and all into the saucepan and boil until tender, or about ten minutes. Store in the refrigerator and consume within one month.
  6. Finished.



Tips

  • If you use ground spices, put in a cheesecloth bag.
