Make a Bailey's Cheesecake

Ready for a sinful, delicious treat that will be hard to resist? We have just the thing —Bailey's Irish Cream Liqueur cheesecake! This is a fantastic recipe that you can use in loads of different ways — not the least of which starts with the variety of flavors including the original (chocolate), hazelnut, mint chocolate, caramel, and coffee. However you slice it, this is one scrumptious cheesecake!

Ingredients

  • 13 ounces (380g) Make Graham Crackers
  • 4 tablespoons butter, softened
  • 1 pound (450g) ricotta cheese
  • 1 8 ounce package cream cheese (220g) Make Cream Cheese
  • 4 eggs
  • 4-1/3 ounces (120g) sugar
  • 2-2/3 ounces (75g) Bailey's Cream Liqueur
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Steps

  1. Assemble the ingredients. Measure everything out before you get started—it'll make the job easier and more fun.

  2. Make the crust. While you can always buy a pre-formed graham cracker pie shell, making it yourself is easy, and tastes way better!
    • Grease the inside of a springform pan. You can use vegetable oil, or softened butter (our preference).

    • Mix the crumbs and softened butter together until well blended, then press over the bottom and sides of the pan. Place the pan in the refrigerator to chill and set while you make the batter.

  3. Preheat the oven to 325ºF/165ºC. Get this started now, so when you're cheesecake is assembled, it'll be ready to bake.
  4. Make the batter. This is where your inner chef gets to come out and play.
    • Combine the ricotta and cream cheese, beating well until smooth.
    • Fold in the remaining ingredients and continue beating until the mixture is smooth.
  5. Put it all together. Pour the cheesecake batter into the chilled crumb pan.
  6. Place the cheesecake in the oven. Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
    • You may place a shallow pan of water in the oven under the cheesecake pan while baking to prevent cracking of the cheesecake.
  7. Let it cool! I know you'll be tempted, but let the cheesecake cool down for about 20 to 30 minutes in the pan.
  8. Loosen the springform. When the cheesecake has cooled, remove the cheesecake from the pan and let it finish cooling completely.
  9. Enjoy!

Tips

  • Use Baileys mint, and gently swirl a few drops of red food coloring into the batter (after it's been poured into the pan), and you have a candy cane cheesecake.
  • Add toppings or garnishes that highlight the flavor of your cheesecake.
  • Try different flavors of Baileys to see which one you like best.
  • Try different ingredients. For example, substituting the ricotta cheese with pureed pumpkin, adding pumpkin pie spices like clove, cinnamon, and allspice, then matching it with the caramel-flavored Baileys will deliver a Thanksgiving delight.
