Make a Broccoli and Carrot Rice Topping

This is a very tasty topping that is totally vegetarian and can be added to any type of cooked, savoury rice.

Ingredients

  • 1/2 cup broccoli cut into small pieces
  • 1/2 cup raw carrots diced
  • 3 tbs olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp ground pepper or ground pepper. Red, black or white as you desire.
  • 1/2 tsp chili powder
  • 4 tbs of soy sauce

Steps

  1. Heat skillet with olive oil.
  2. Place broccoli and carrots in skillet. Stir fry vegetables.
  3. Add garlic powder, pepper, chili powder and soy sauce.
  4. Turn heat to low and stir constantly until vegetables are tender.
  5. Place over rice and enjoy!
  6. Finished.

Tips

  • Serve this topping on rice which is accompanying a protein based dish such as beans, chicken or eggs to make a nutritional balanced meal.
  • If you don't have a skillet, use a wok or a frying pan.
