Make a Doppio (Espresso Coffee)

Two shots of espresso concentrated into approximately the same volume as a regular espresso. Caffeine injection anyone? (Doppio is Italian for 'double'.) A double espresso is two singles espresso in one cup not a double strength in a single cup. In Italy if you ask for a Doppio this is what you get.

Steps

  1. Get hold of some high quality espresso beans (preferably roasted 2-7 days ago).
  2. Grind these espresso beans until they are very fine. Learn about grinding for an espresso machine.
  3. Pack the grinds into the group (handle) of the espresso machine. Pack the group full and hard. This will drive the full taste and coffee kick. The group filter basket should be a double.
  4. Place a single cup under the group. Turn on your espresso machine. It may labour more than normal. (You did pack the grinds tight, but not too tight?) You should see a hazel brown cream appear at the surface of the coffee when it is finished.
  5. Wait for 27-30 seconds.

Things You'll Need

  • Espresso machine or mocha pot
  • Your favourite coffee beans, ground finely
  • A glass and a small spoon (a teaspoon)
