Make a No Bake Birthday Cake

If it's your friend's birthday and you want to spoil her, why not make her this delicious cake? You don't even have to bake it!

Ingredients

  • 175g/6 oz digestive biscuits (aka graham crackers in the US)
  • 75g/2.6 oz butter
  • 225g/8 oz cream cheese
  • 150ml/5 fl. oz strawberry yogurt
  • 150ml/5 fl. oz double cream
  • A dozen ripe strawberries

Steps

  1. Place the biscuits into a re-sealable zipper storage bag. Use a rolling pin to make crumbs out of the biscuits.
  2. Melt the butter in a saucepan and stir in the biscuit crumbs you have created.
  3. Tip the mixture into the bottom of a 20cm (7.8") flan dish and press it down with the back of a spoon to make a flat base. Set it on the side to cool.
  4. Place it in the fridge for half an hour, or until hardened.
  5. Mix together the cream cheese and yogurt in a large bowl.
  6. Whisk the double cream in a separate bowl, until it makes stiff peaks. This is easier and faster to accomplish with an electric whisk.
  7. Gently fold the whisked cream into the cheese and cream. Stir once around the bowl and once through the middle with the side of a wooden spoon. Continue this until all the cream is mixed in.
  8. Tip the cream cheese, yogurt and cream mixture on top of the biscuit base. Spread it out evenly, then put it back in the fridge until the filling is firm - about 30 minutes.
  9. Slice the strawberries and arrange them in a pattern on top of the cake. You may want to remove bruised or discolored areas on the strawberries.
  10. Add some birthday candles.

Tips

  • You can make multiple layers for this cake.
  • You could use different fruits to suit the taste of the birthday girl/boy - raspberries or blueberries are both good choices, or even peaches.
  • Sometimes you can add melted chocolate to the biscuit crumbs. This makes it even tastier.
