Make a Carrot Nut Cake

Ingredients

  • 3 cups (375g) all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 4 eggs, beaten
  • 1 1/2 cups (120 ml) vegetable oil
  • 2 cups (400g) sugar
  • 2 cups (220g) fresh grated carrots
  • 1 cup (110g) chopped pecans
  • 1/2 cup raisins
  • 2 teaspoons cinnamon

Steps

  1. Preheat oven to 300ºF/150ºC.
  2. Butter one tube cake pan.
  3. In a large bowl combine flour, baking soda, baking powder and salt.
  4. In the center of the mixture, create a well with a spoon.
  5. Add the beaten eggs, oil and sugar to the center of the well.
  6. Beat the mixture on high speed, for two minutes or until completely blended.
  7. Add carrots, raisins, nuts and cinnamon and stir into the cake batter.
  8. Pour mixture into the buttered tube cake pan.
  9. Bake for 1 hour and 15 minutes minutes.
  10. Cool for 15 minutes, prior to removing cake from pan.
  11. Finished.

Tips

  • Prior to placing the raisins into the cake batter, place them in a sandwich baggy with a little flour and shake to coat them with a light coating of flour. This will prevent the raisins from sticking to the baking pan.
