Make a Carrot Nut Cake

Ingredients
- 3 cups (375g) all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 4 eggs, beaten
- 1 1/2 cups (120 ml) vegetable oil
- 2 cups (400g) sugar
- 2 cups (220g) fresh grated carrots
- 1 cup (110g) chopped pecans
- 1/2 cup raisins
- 2 teaspoons cinnamon
Steps
- Preheat oven to 300ºF/150ºC.
- Butter one tube cake pan.
- In a large bowl combine flour, baking soda, baking powder and salt.
- In the center of the mixture, create a well with a spoon.
- Add the beaten eggs, oil and sugar to the center of the well.
- Beat the mixture on high speed, for two minutes or until completely blended.
- Add carrots, raisins, nuts and cinnamon and stir into the cake batter.
- Pour mixture into the buttered tube cake pan.
- Bake for 1 hour and 15 minutes minutes.
- Cool for 15 minutes, prior to removing cake from pan.
- Finished.
Tips
- Prior to placing the raisins into the cake batter, place them in a sandwich baggy with a little flour and shake to coat them with a light coating of flour. This will prevent the raisins from sticking to the baking pan.
