Ingredients
Cocktail Shaker Method
- 1 egg white
- 2 1/2 ounces pisco
- 1/2 ounce simple syrup
- 3/4 ounce fresh lemon juice
- Angostura bitters
Blender Method
- Juice of 1/2 lime
- 1 tablespoon pasteurized egg white
- 2 tablespoons sugar, or more to taste
- 1/4 cup crushed ice
- 2 ounces Peruvian pisco (1/4 cup)
- Angostura bitters
Steps
Using a Shaker
- Fill the shaker with ice.
- Add egg white, pisco, simple syrup, and lemon juice.
- Shake vigorously for 15 seconds until frothy and strain.
- Add a few drops of bitters.
Using a Blender
- Blend the lime juice and sugar until the sugar is dissolved.
- Add pisco, egg white and ice. Blend at high speed until frothy.
- Pour into a sour glass.
- Add a few drops of bitters.
Tips
- Chilean pisco is sweeter and has a slightly lower proof than Peruvian pisco.
