Make a Spinach Omelette

This is for spinach lovers who want to mix eggs with their spinach. Combining both spinach and eggs together will make for a scrumptious breakfast.

Ingredients

  • 2 eggs
  • 1 cup spinach
  • paprika powder
  • oregano, green chillies, rosemary, basil, pepper (optional)

Steps

  1. Prepare the spinach. Wash the spinach leaves with water to remove all dirt and pesticides. Using a sharp knife cut the spinach into evenly small pieces. Spread the spinach leaves onto paper towel to absorb excess water.
  2. Heat oil in a thick bottomed pan. Drizzle oil onto pan to prevent sticking. Add in the spinach leaves when the pan is ready. Splash water onto the pan if you hear sizzling then it's ready. You could also add some chopped green chillies, oregano, rosemary, basil and pepper for extra flavour.
  3. Fry until spinach is nearly crisp. Meanwhile, keep the egg mixture ready.
  4. Add the egg. Lower the heat then pour in the egg mixture evenly over the spinach.
  5. Allow the eggs to cook. Cover the pan and keep on low heat until eggs are set.
  6. Serve the omelette. Remove from heat and transfer omelette to a dish. Lightly sprinkle red paprika powder.



Tips

  • You can use the same method as above. Instead of spinach, try finely chopped onions, tomatoes and green chillies. In this case, let the onions fry for some time before adding finely chopped tomatoes and chillies. When tomatoes are soft, pour the egg mixture in the pan. Always lower the heat before pouring on the eggs. To get a nice spongy omelette, whisk the egg mix thoroughly.
