Rescue Stiffened Melted Chocolate
When working with melted chocolate, if you encounter the misfortune of it stiffening all of a sudden (also known as seizing), don't throw it away just yet. You may be able to rescue it by following these steps.
Ingredients
- Melted chocolate
- 1 - 2 teaspoons vegetable oil
Steps
- Remove the chocolate from the heat immediately.
- Dry any beads of steam or water that are found on the double boiler bowl. Use a clean tea towel or paper kitchen towel to dab it.
- Stir in 1 to 2 teaspoons of vegetable oil gradually, stirring all the time.
- Continue stirring until the chocolate becomes smooth again.
- Use it in your recipe as normal. If the chocolate does not return to a normal, smooth consistency, it is likely that the chocolate has been burnt and should be discarded.
Tips
- Note that rescued chocolate does not look glossy again; if it is really important to have a glossy look, you will need to melt a new lot of chocolate.
- You can substitute white vegetable fat for the vegetable oil if preferred, for example, Copha™ or Kremelta™ (hydrogenated coconut oil).
