Make Creamy Avocado Pasta

Creamy avocado pasta is a terrific meal that can be whipped up in less than 20 minutes. The ingredients are simple, but the combination creates a pleasingly deceptively rich main dish.

Ingredients

  • 6 ounces/170 grams pasta, any kind
  • 1 large ripe avocado, pitted and peel removed
  • 1 tablespoon fresh or bottled lime juice
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh cilantro (fresh coriander)
  • 1/2 teaspoon kosher salt (or quality sea salt)
  • Freshly ground black pepper, to taste

Steps

Preparing the Sauce

  1. Place the avocado, garlic, lime juice, cilantro, salt and pepper into a food processor or blender.
  2. Process the ingredients until smooth and creamy.
  3. Scrape the sauce out of the blender or food processor with a spatula. Put it into a medium-sized bowl.
  4. Cover the bowl with plastic wrap to prevent the avocado from turning brown too quickly. Set it aside while you prepare your pasta.

Preparing the Pasta

  1. Bring 5 cups of water to a boil in a medium-sized saucepan or cooking pot.
  2. Add the pasta and reduce the heat to medium.
  3. Give the pasta a stir to make sure that it doesn’t all clump together at the bottom of the pot.
  4. Cook the pasta for about 10 minutes, or until al dente. Read the instructions on the pasta package if you’re unsure how long this will be. Note that if you’re using fresh pasta, this takes less time to cook.

Adding the Sauce

  1. Place a colander in the sink. Drain the water from the pasta.
  2. Uncover the bowl containing the avocado sauce while the pasta is draining.
  3. Add the pasta to the avocado sauce and mix it together thoroughly.
  4. Serve the dish immediately. Serve with fresh rolls and a salad, if desired.

Tips

  • This meal is best if eaten the same day it is made. Indeed, it tastes best if you serve it immediately.
  • If you don’t have any cilantro (fresh coriander) on hand, you can substitute 1 cup of fresh spinach or parsley.
  • Add some color to the dish by tossing in chopped cherry tomatoes.
  • This recipe is both vegetarian and vegan; it can also be gluten-free if you use gluten-free pasta.

Warnings

  • Don’t overcook the pasta. The creamy sauce doesn’t work well with mushy pasta.
