Make Gluten Free Anzac Biscuits
Anzac Day is a holiday in Australia and New Zealand that commemorates the contribution and sacrifices made by soldiers in World War I and World War II. Anzac biscuits are traditional oat-based cookies, and this version replaces wheat flour with both white and brown rice flour. The recipe is also free of nuts, soy and eggs.

Ingredients
- 1 cup gluten-free rolled oats
- 1/2 cup white rice flour
- 1/2 cup brown rice flour
- 1/4 cup shredded coconut
- 1 cup coconut sugar
- 1 stick (125 g) butter
- 4 tbsp. maple syrup
- 1/2 tsp. baking soda
- 4 tbsp. boiling water
This recipe makes about 30 biscuits.
Steps
- Spray nonstick cooking spray on two flat cookie sheets and then set your oven to 300°F/150°C so that it can start preheating.
- Place the oats into a large mixing bowl.
- Sift the white rice flour, brown rice flour and baking soda together over the oats.
- Add the coconut and coconut sugar. Stir the dry ingredients with a spoon until they are well combined.
- Melt the butter over medium heat in a small saucepan.
- Remove the pan from the heat and stir in the maple syrup.
- Fold the melted butter mixture and water into the dry ingredients until the dry ingredients are thoroughly moistened.
- Drop the cookie dough by tablespoons onto the cookie sheets. Leave space between the cookies because they will spread while they bake.
- Place the cookie sheets in the oven and bake the cookies for 20 minutes.
- Remove the cookies from the oven. Allow them to sit and cool for two minutes before removing them from the cookie sheets with a spatula.
- Place the cookies on cooling racks and let them cool to room temperature, which is about 73°.
Tips
- If you can’t find coconut sugar at your supermarket, just substitute regular granulated sugar.
- Use Grade B maple syrup for the best flavor.
Warnings
- Make sure that the oats have not been processed in a facility where they could have been cross-contaminated with wheat.
