Make Gluten Free Anzac Biscuits

Anzac Day is a holiday in Australia and New Zealand that commemorates the contribution and sacrifices made by soldiers in World War I and World War II. Anzac biscuits are traditional oat-based cookies, and this version replaces wheat flour with both white and brown rice flour. The recipe is also free of nuts, soy and eggs.

Ingredients

  • 1 cup gluten-free rolled oats
  • 1/2 cup white rice flour
  • 1/2 cup brown rice flour
  • 1/4 cup shredded coconut
  • 1 cup coconut sugar
  • 1 stick (125 g) butter
  • 4 tbsp. maple syrup
  • 1/2 tsp. baking soda
  • 4 tbsp. boiling water

This recipe makes about 30 biscuits.

Steps

  1. Spray nonstick cooking spray on two flat cookie sheets and then set your oven to 300°F/150°C so that it can start preheating.
  2. Place the oats into a large mixing bowl.
  3. Sift the white rice flour, brown rice flour and baking soda together over the oats.
  4. Add the coconut and coconut sugar. Stir the dry ingredients with a spoon until they are well combined.
  5. Melt the butter over medium heat in a small saucepan.
  6. Remove the pan from the heat and stir in the maple syrup.
  7. Fold the melted butter mixture and water into the dry ingredients until the dry ingredients are thoroughly moistened.
  8. Drop the cookie dough by tablespoons onto the cookie sheets. Leave space between the cookies because they will spread while they bake.
  9. Place the cookie sheets in the oven and bake the cookies for 20 minutes.
  10. Remove the cookies from the oven. Allow them to sit and cool for two minutes before removing them from the cookie sheets with a spatula.
  11. Place the cookies on cooling racks and let them cool to room temperature, which is about 73°.

Tips

  • If you can’t find coconut sugar at your supermarket, just substitute regular granulated sugar.
  • Use Grade B maple syrup for the best flavor.

Warnings

  • Make sure that the oats have not been processed in a facility where they could have been cross-contaminated with wheat.
