Make Gluten Free Chocolate Chip Cookie Bars

Gluten-free foods are often considered 'tasteless', but this isn't a fair assumption; many gluten-free foods are delicious. And these yummy chocolate chip bars will prove the point – they're both gluten free and vegan, and they're very delicious. Try them out, whether or not you're restricted from gluten.

Ingredients

  • 2 cups Bob’s Red Mill all-purpose Make Gluten Free Cake Flour or other gluten-free baking flour
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon sea salt
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups light brown sugar
  • 1/2 cup canola oil
  • 1 1/2 tbsp vanilla extract
  • 2 tablespoons agave nectar
  • 9 tablespoons brewed coffee (or you can use rice, almond or soy milk)
  • 1 tablespoon ground flaxseed meal
  • 1 1/2 cups gluten free semi-sweet chocolate chips

Steps

  1. Preheat the oven to 350°F/180ºC.
  2. Lightly grease a 9" X 13" baking pan.
  3. In a large bowl, whisk together the baking flour, xanthan gum, salt, baking powder and the baking soda.
  4. Add the flax meal, and whisk until combined. The flaxseed works in place of an egg; it helps to bind and it adds fiber.
  5. Stir in the brown sugar and whisk until combined.
  6. Add the oil, vanilla, agave syrup, and coffee.
  7. Mix together using a spatula if you find the whisk is not cutting through the dough.
    • If the dough is way too stiff and you need it to be a bit thinner or smoother, add another tablespoon at a time of coffee to soften. Do this until it forms a pretty thick cookie dough.
  8. Stir in the chocolate chips.
  9. Scrape the batter into the greased baking pan.
  10. Spread batter evenly into prepared pan.
  11. Bake in the center of preheated oven for 35 to 40 minutes, or until the center is almost firm to the touch and just leaves a little dent in the top.
    • When you press on them, they'll feel a little soft but you'll be able to see that it looks done. If you test it with a toothpick or knife, it will appear a little gooey, but that's fine.
  12. Let the bars cool completely in pan before cutting into squares or bars. They're now ready to serve.
  13. Finished.

  • These are great treats for families where some members are gluten intolerant and others are not; nobody will notice the difference!
