Make Strawberry Yogurt Pancakes
Pancakes make a delicious breakfast or a snack at night. Bacon on the side, with a delicious hot cup of coffee, and you are in pancake heaven. Adding a few fresh strawberries on top pancakes and add strawberry yogurt to the batter.
Ingredients
- 2 cups pancake mix
- 1 cup milk
- 2 large eggs
- 1 cup sliced fresh strawberries
- 4 oz strawberry yogurt
Steps
- Spray the griddle pan thoroughly with the non-stick cooking spray and set it on your stove top. Set the stove to medium.
- Mix all ingredients in a larger mixing bowl except for a 1/4 cup of strawberries. Add 4 ounces of plain yogurt or strawberry yogurt to your batter; remember this is a recipe for strawberry yogurt pancakes! Stir thoroughly to ensure all ingredients are mixed together.
- Pour pancake batter on to the griddle using a 1/4 cup measuring cup, or 1/2 cup for larger pancakes. You should be able to fit 4 pancakes on a {{safesubst:#invoke:convert|convert}} griddle using the 1/4 cup measuring cup.
- Flip the pancakes over using a spatula when you see the edges of the pancakes starting to dry. The side that was down on the griddle should be a nice golden brown.
- Check under a pancake to see if the other side has browned, and take them off the griddle. Add more pancakes to the griddle, or store the extra batter in your refrigerator.
- Top the pancakes with the remaining strawberries. You can then add other pancake favorites like butter and syrup.
Tips
- You can make healthier pancakes by using low-fat yogurt, low carbohydrate pancake batter, sugar-free syrup, low-fat milk, and a low-fat butter substitute.
- Use less milk for fluffier pancakes, and more milk for denser pancakes.
