Make a Singapore Sling

The Singapore Sling you get in a bar bears little resemblance to the original recipe. In fact, the original recipe developed at Singapore's Raffles Hotel around 1910, was passed down orally, getting lost in translation. The recipe provided here is based on the one printed at the Raffles hotel, and is the closest approximation to how the drink was originally made.

Ingredients

Version one:

  • 7 ½ ml / ¼ fl oz / 1.5 teaspoons lime juice
  • 75 ml / 2 ½ fl oz pineapple juice
  • Some Angostura bitters
  • 7 ½ ml / ¼ fl oz benedictine
  • 15 ml / ½ fl oz cherry brandy
  • 7 ½ ml / ¼ fl oz cointreau or triple sec
  • 25 ml / 7⁄8 fl oz gin
  • 7 ½ ml / ¼ fl oz grenadine
  • 1 pineapple slice
  • 1 glace cherry

Version two:

  • 1 oz fresh lime juice
  • 1 oz Cherry Heering (or cherry brandy)
  • 1/4 oz Benedictine
  • 1/4 oz brandy
  • 2 oz gin
  • 1 1/2 oz club soda

Steps

Version One

  1. Add the lime juice to a mixing glass.
  2. Add the pineapple juice.
  3. Add a dash of Angostura bitters.
  4. Pour in the benedictine.
  5. Add the cherry brandy next and the Make Cointreau Granita or triple sec.
  6. Add the gin.
  7. Fill the mixing glass with ice cubes.
  8. Shake. Put the top half of the cocktail shaker on. Slap it down firmly to seal. Hold the top and bottom, and shake vigorously over your shoulder for about 20 seconds.
    • When you see condensation on the outside of the shaker and it feels very cold, the Singapore Sling is mixed.
  9. Tap the side of the shaker to loosen the two halves. You may need to rock the glass back and forth to release it.
  10. Strain. Place the strainer over the shaker and strain into the long glass.
  11. Top up the drink with crushed ice.
  12. Drizzle with the grenadine so that it oozes down the edges of the drink.
  13. Garnish. Add two straws, a slice of pineapple, and a glace (glazed) cherry. It is now ready to serve.
  14. Finished.

Version Two: Raffle's Singapore Sling

Here's the actual recipe that Jeff Berry (Beach bum Berry) unearthed. This is the recipe used by the Raffles in the 1950s.

  1. Shake all ingredients except the club soda (it'll explode) with ice.
  2. Strain into a tall glass.
  3. Add ice cubes to fill.
  4. Garnish with orange slice and mint sprig.

Tips

  • You can substitute sweetened lime juice, but use fresh lime juice whenever possible.
