Lima beans are also known as butter beans. They are a member of the kidney bean family, originating in Lima, Peru. Steps
- Pre-soak Lima beans. They require four cups of water to one cup of beans. Leave in a bowl of water to soak overnight, for 12 hours. The beans will swell to twice the volume.
- Drain the beans.
- Put the beans into a saucepan with 2-3 cups of water.
- Bring to the boil. Once boiling, reduce the heat and simmer for 1 hour. When the beans are soft, they are ready for use.
Tips
- If you have a pressure cooker, pressure cook the beans for 35 minutes.
