Prepare Lima Beans

Lima beans are also known as butter beans. They are a member of the kidney bean family, originating in Lima, Peru. When cooked, these beans have a soft texture that blends well into creamy style dishes and their delicate flavour makes them a perfect addition to many soups, salads, casseroles, and bean dishes. This article explains how to prepare them.

Steps

  1. Pre-soak Lima beans. They require four cups of water to one cup of beans. Leave in a bowl of water to soak overnight, for 12 hours. The beans will swell to twice the volume.
  2. Drain the beans.
  3. Put the beans into a saucepan with 2-3 cups of water.
  4. Bring to the boil. Once boiling, reduce the heat and simmer for 1 hour. When the beans are soft, they are ready for use.

Tips

  • If you have a pressure cooker, pressure cook the beans for 35 minutes.
