Cook Chicken Alfredo
Italian pasta has always been popular worldwide and this pasta variation is no less than mouthwatering than the others. Try out this pasta popularized by restaurateur Alfredo di Lelio in Rome.
Ingredients
- 1 whole chicken breast
- Cooked pasta (cook according to package directions)
- 100 grams chopped white onion
- 2 tbsp olive oil
- Chopped herbs (e.g. tarragon, basil, parsley)
- 30 ml white wine
- 400 ml heavy cream
- Salt
- Pepper
Steps
- Skin, debone & cut chicken breast into even sized strips.
- Season with salt and pepper.
- Preheat Olive oil in a saucepan.
- Sear chicken pieces until light brown.
- Remove chicken from pan and pour off excess oil.
- Sweat onions until translucent.
- Deglaze with white wine.
- Add heavy cream and simmer to thicken.
- Put chicken strips back into the pan.
- Add chopped herbs.
- Season with salt and pepper.
- Add in cooked pasta.
- Serve while hot.
Tips
- Avoid boiling the sauce once cream is added to avoid splitting
