Cook Indian Onion Bhaji
Onion Bhaji is also known as Vengaya Bhaji and is a type of fritter made with vegetables, deep-fried with seasoned batter. Bhaji is a common appetizer in South India. This recipe will make enough for 20 pieces.
Ingredients
- 4oz gram flour (chickpea or besan flour)
- 2 onions, roughly chopped
- 1 teaspoon of fresh coriander, chopped
- ½ teaspoon of turmeric
- chilli (to taste), deseded and finely chopped
- a pinch of salt and pepper
- 1 cup of water
- Oil for frying
- 1 tsp cumin seeds
Steps
- Sieve the gram flour into a bowl and water. Mix until batter is smooth and no lumps in it. Then add all the ingredients.
- You want a mixture that is just gloopy enough to dribble off a spoon.
- Deep fry in batches for 2-3 minutes, until golden brown.
- If you have any lemon juice, sprinkle it onto the bhaji.
- Eat !!
Tips
- Of course, you can get rid of the chillies altogether; just replace them with a bit of chili powder, or pepper.
- These are good served with chutney for dipping, as a snack.
- If you've any left over the next day, try roughly chopping them up and dropping them on your salad.
- Some people add chopped mint with the coriander, for a nice bite.
- Eat while it's still warm.
- Usually, you'll only need 1-2 chillies, but some people like it hot! Don't go over 4 chillies, though.
Warnings
- Make sure to wash your hands very well after handling the chili peppers.
- Keep in mind, this is Indian street food; if serving a fancy lot, opt for a curry instead.
- Be very careful around the hot oil!
