Make Cayenne Pepper

You can make your own cayenne pepper at home if you've had a bumper chilli pepper crop.

Ingredients

  • 25g red chilli peppers
  • 7.5g salt

Steps

  1. Buy the peppers from a store or harvest them from your garden.
  2. Remove the stalks from the chili peppers.
  3. Dry the chili peppers in a slow oven (around 150ºC, or approximately 300ºF) until crisp. Keep a regular watch on their progress so that you will know when they have dried.
  4. Remove from oven and allow to cool completely.
  5. Place in a mortar and pestle with the salt. Pound the chili peppers and salt together until you get a powder.
  6. Store in an airtight container. Use as required, in recipes that call for cayenne pepper.

Tips

  • Remember not to touch your face, especially the eye and mouth areas when making this preparation.
  • Keep the oven door closed while cooking.
