Make Chocolate Custard

Chocolate custard is a delightful dessert and snack treat. It can be simple or complex, depending on how much effort you're willing to put in and the final texture you're after. A few samples of chocolate custard recipes are provided here for you to try.

Ingredients

Egg chocolate custard:

  • 250ml milk
  • 3 eggs
  • 100g dark chocolate
  • 2 tablespoons sugar
  • 1 teaspoon cornflour

No egg chocolate custard:

  • 500ml milk
  • 2 tablespoons cornflour
  • Chocolate custard powder, enough to add flavor
  • Sugar to taste

Creamy chocolate custard:

  • 1 tablespoon vanilla sugar
  • 125g fresh chocolate pudding dessert
  • 3 egg yolks
  • 80g sugar
  • 40g all-purpose/plain flour, sifted
  • 100ml fresh cream

Vegan (dairy-free) chocolate custard:

  • 1/2 cup superfine/caster sugar
  • 1/3 cup cocoa powder or chocolate drinking powder (dairy-free)
  • 2 tablespoons cornflour
  • 2 cups soy or almond milk
  • 1 teaspoon vanilla extract (essence)
  • Pinch of salt

Steps

Egg chocolate custard

  1. Heat the milk on the stove until it bubbles. Remove it from the heat and break the dark chocolate into pieces. Add this to the milk and it will melt with the help of some stirring.
  2. Add all three egg yolks and beat with the sugar until smooth.
  3. Mix the cornflour with a few tablespoons of the 'chocolate milk' and stir until it is smooth paste with no lumps. Add this to the egg mixture and mix well.
  4. Add the egg mixture to the rest of the 'chocolate milk' and whisk over a very low heat until it has thickened slightly. Pour into a jug for serving.
  5. You have your yummy chocolate custard!

No egg chocolate custard

  1. Pour the milk into a heavy-based saucepan.
  2. Bring to the boil. Turn down to a gentle simmer.
  3. Add the cornflour. Stir constantly and quickly until the liquid thickens.
  4. Add the sugar. Cook until it dissolves.
  5. Remove from the heat.
  6. Pour into a dish to set. Place in the refrigerator to set. This will take about 1 to 1.5 hours.

Creamy chocolate custard

  1. Pour the milk into a heavy-based saucepan. Add the vanilla sugar. Bring to the boil.
  2. Add three to four dessert spoons of water to the chocolate pudding dessert. Mix to dissolve into a liquid.
  3. Pour the chocolate pudding dessert into the milk. Stir to combine.
  4. Remove the chocolate milk from the heat.
  5. Beat the egg whites in a mixing bowl. Fold in the sugar and flour.
  6. Pour the chocolate milk into the egg mixture. Add gradually and stir constantly.
  7. Return the entire mixture to the saucepan. Bring to the boil for about 1 minute, to thicken.
  8. Remove from the heat. Pour into a suitable serving dish. Place a sheet of parchment or baking paper across the top to prevent a skin forming when refrigerated. Place in the refrigerator to set. This will take about 1.5 to 2 hours.
  9. Serve cold. Add whipped cream or chantilly cream, as desired. Enjoy!

Vegan (dairy-free) chocolate custard

  1. Follow the amounts provided very carefully. Too much or too little of any one ingredient risks spoiling the texture and taste of this custard.
  2. Add all of the ingredients except for the vanilla to a large, heavy-based saucepan.
  3. Place on medium heat. Bring to the boil, stirring constantly.
  4. Allow to boil for 2 minutes. Whisk constantly.
  5. Remove the custard from the heat. Add the vanilla and stir through.
  6. Pour the custard into the serving dish. Place in the refrigerator to set. This will take at least 2 hours.
  7. Serve cold.

Tips

  • The custard can be poured into one large dish or several smaller dishes or bowls. It is up to you how you would like to serve the end result.

Warnings

  • Make sure while heating the milk that it doesn't curdle... you don't want that to happen!
