Make Hillbilly Gravy for Biscuits

Biscuits are a delicious snack and a great side dish for your meals. But most of the time, they taste rather dull. Instead of going for the regular gravy, why don't you try real hillbilly gravy? It tastes wonderful, and you will be glad you made hillbilly gravy over regular gravy. Here is how to make hillbilly gravy for biscuits!

Steps

  1. In a large frying pan cook a pound of bacon over medium heat. When the bacon is done remove from the pan, drain on a rack and save for later.
  2. Still over medium heat, Add 2 heaping tablespoons of all purpose flour. Fry the flour in the bacon grease until it turns golden brown. If you don't fry the flour enough the gravy will taste like wallpaper paste. However try not to burn it.
    • Variation: You may use cornmeal, flour, and extra pepper.
  3. Slowly whisk in the whole milk, incorporating a few ounces at a time. If you add the milk too quickly the gravy will not thicken properly and you will get little clumps of fried flour in some funky milk concoction which is not very appetizing.
    • Another option is to add water (instead of milk) to the flour once it's browned. Cook to a little thicker than you want it. Remove from heat and then add evaporated milk.
  4. Add salt and black pepper to taste. (! I don't add the salt until the gravy is finished cooking because it tends to cause the gravy to "curdle.")
  5. Simmer the gravy until it begins to thicken and then remove from the heat.
  6. Let the gravy stand for a few minutes of cooling.
  7. Pour over your biscuits, eggs, and bacon for a tasty breakfast.



Tips

  • Too little milk and you have gravy gel!
  • Too much milk and it will never thicken... you could always try adding a little cornstarch to try to save it.
  • Brown the flour to just a little darker than you want the gravy to turn out.
  • Almost any animal fat can be used to make this gravy, however bacon grease tastes the best!
  • Take your time and have fun
  • Lots of black pepper is essential to the taste, don't hold back.
  • If you need gravy for only one or two people, you can use the 2/2/1 method: 2 Tbsp bacon grease, 2 Tbsp flour, 1 cup milk. Brown the flour as described above. Add milk carefully to be sure the gravy will thicken. If it's too thick, just add a little more milk.
  • If you mistakenly add too much milk, add more flour to re-thicken it the gravy.
  • Gauge the amount of milk, by the thickness desired.

Warnings

  • Bacon grease is full of saturated fats. Enjoy in moderation.
  • Be careful, a pan of hot bacon grease can burn you.

  • A Large frying pan

  • 2-3 cups of whole milk (low-fat optional)
