Make Orange Chicken

Asian cuisine is growing more popular day by day, as are the many restaurants from which you can easily order different Asian dishes. Here's a wikiHow on how to make orange chicken similar to the orange chicken you can order at Panda Express.

Ingredients

Chicken

  • 2 lbs (907 grams) boneless skinless chicken, chopped into bite-sized pieces
  • 1 egg
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 1 teaspoon vegetable oil
  • 1/2 cup (60 grams) cornstarch
  • 1/4 cup (35 grams) flour

Orange Sauce for Stir-fry

  • 2 1/2 tablespoons soy sauce
  • 1 1/2 cups water
  • 3 tablespoons sugar
  • 3 1/2 tablespoons white vinegar
  • Zest of 1 orange
  • 1 1/2 tablespoons cornstarch (see step 16)

Stir-fry

  • 1 tablespoon of minced ginger root
  • 1 teaspoon minced garlic
  • 1/4 teaspoon crushed hot red chili pepper
  • 1/4 cup (25 grams) of chopped green onion
  • 1/4 cup (60 mL) orange juice OR rice wine

Steps

  1. Place chicken pieces in a large bowl.
  2. In another large bowl, stir in egg, salt, pepper and 1 tablespoon of vegetable oil and mix well.
  3. Add chicken pieces to this mix and stir coating the chicken thoroughly.
  4. Get a deep dish and add cornstarch and flour, then mix it together.
  5. Add the chicken pieces into the dish of the flour and cornstarch mix and coat the chicken pieces.
  6. Grab a wok and add in vegetable oil to deep-fry the chicken or get a deep-fryer and set it to 375 degrees F (190 degrees C).
  7. Add chicken, small batches at a time, and fry 3 to 4 minutes or until golden crisp.
  8. Remove chicken from oil with slotted spoon and drain on paper towels. Set aside.
  9. Clean wok and heat 15 seconds over high heat.
  10. Add 1 tablespoon of vegetable oil.
  11. Add ginger and garlic and stir-fry for about 10 seconds until fragrant.
  12. Add and stir-fry crushed chilies and green onions.
  13. Add water and orange juice and stir for 3 seconds.
  14. Add orange sauce and bring to boil.
  15. Add cooked chicken and stir until all of the chicken is coated.
  16. In a small dish mix cornstarch and a little water together until it's smooth, and add slowly to the stir-fry so sauce slightly thickens.
  17. Heat until sauce is thickened.
  18. Stir in sesame oil and orange zest if desired.
  19. Finished.



Tips

  • Best served with rice or noodles.
  • When the wok is fully heated, remove from heat and swirl in oil to prevent smoke.
  • Adding vegetables in your stir-fry, like green peppers, adds more flavor.
  • When adding sauces or liquids, swirl them down the sides of the wok rather than dumping into the center. This will keep the wok hot.

Warnings

  • Add in your ingredients to the stir-fry gently to prevent splashing of oil.
  • Always wash your hands after handling raw meats and never place cooked foods into dishes that had just had raw meat in it. Wash dishes that have touched raw meats before using it on cooked foods.
  • Never eat chicken that is pink or uncooked. Make sure you cook your chicken all the way.
