Make a Bellini Cocktail

This simple cocktail with an international, sophisticated flair is a mixture of sparkling wine and puréed peach. Created in 1948 by Giuseppe Cipriani, it was named in honor of Venetian Renaissance painter Giovanni Battista Bellini.

Ingredients

  • Champagne or sparkling wine (traditionally prosecco - it's cheaper than champagne and it doesn't overpower the peach[1])
  • Make Peach Trifle(1 per cocktail)

Steps

  1. Take your peaches, remove the stones, and cut the peaches into small pieces and blend at high speed until puréed.
  2. Put 20ml or 4 teaspoons of peach purée into the champagne glass.
  3. Slowly top up the glass with champagne, stopping to wait for the bubbles to settle. When the glass is about three quarters full, vigorously stir the drink with the bar spoon. Then fill the rest of the glass with champagne.
  4. Finished.

Tips

  • You can also use Prosecco to make the cocktail.
