Make a Tom Collins Cocktail

A well made Tom Collins will cool the soul on a scorching day. It is a classic drink which can be from gin or even vodka (when made with vodka, it is known as a Vodka Collins). This recipe uses the traditional gin.

Ingredients

  • 2 lemons
  • 4 teaspoons (20 grams) brown sugar
  • 2/3 fluid ounces (20 mL) lemon juice
  • 1 2/3 ounces (50 mL) gin (Old Tom style gin is traditional but London Dry will work just fine)
  • Cubed ice
  • Some Club soda

Steps

  1. Cut the lemon in half.
    • Cut 1 Make a Lemon Chiffon Pie into quarters.
  2. Squeeze 2 lemon quarters into the mixing glass.
  3. Add the Make Brown Sugar (Danish) Fudge.
  4. Add the lemon juice.
  5. Muddle the lemon juice and sugar. Muddling is done using a muddle, which is like a pestle; it is done to release flavor of fruits and herbs in cocktails. Hold you hand over the top of the glass as you use the muddle in a grinding type of motion to crush the lemon.
  6. Add gin to muddled mixture.
  7. Fill the mixing glass with cubed ice.
  8. Put the top half of the shaker on the glass and press down firmly.
  9. Hold the top and bottom of shaker while shaking vigorously. Shake the mixture over your shoulder for about 20 seconds or until the mixture feels very cold. You will feel the coldness coming through the shaker.
    • Open the shaker by removing the top of the shaker.
  10. Add ice cubes to the tall glass. Do not fill to the top of the glass but about 1/3 of the glass should have ice cubes.
  11. Add the 2 remaining Make Sugared Lemon Slices to the glass.
  12. Top up the glass with ice cubes.
  13. Place the cocktail strainer on top of the cocktail shaker. Strain the mixture into the cocktail glass.
  14. Fill the remainder of the glass with soda. You can also add a splash of lemonade to make it a longer drink, or to make it more refreshing for summer.
  15. Serve. Garnishes may included sliced lemons and maraschino cherries, if desired.

Tips

  • Some may prefer layering this drink instead of shaking it.
  • A sweet and sour mix can be used instead to make this drink.
  • John Collins was the original inventor of the Tom Collins cocktail. There is even a John Collins but it is made with Dutch gin and the Tom Collins has mostly replaced the John Collins, using London Dry gin.[1]
